Tapioca pearls and Chia seed pudding
Happy New Year !!
I have been so fascinated with chia seeds but never got a chance to make something with it other than throwing a teaspoon or two in my porridge or a smoothie. I was so keen to try and make a pudding out it. So, whilst sorting my kitchen cabinet I found tapioca and next to that was desiccated coconut.. coincidence? Maybe that was a hint.. :)) the thought was instantaneous and i had to try this combination of tapioca coconut pudding layered with chia seeds and topped with diced mango! And all of this does not have an ounce of sugar in it… only honey!! Healthy, isn’t it!!

Now this is how I made it –
Ingredients:
250ml full fat milk
75gm tapioca pearls
Honey
2 tablespoon dessicated coconut
2 tablespoon chia seeds soaked in a cup of milk
Mango finely diced
Method:
Soak the tapioca for half hour in milk and then cook until tapioca is nice and soft
Add the honey according to the sweetness you want
Add the dessicated coconut and stir for a bit
Let it cool down completely
Soak the chia seeds in a cup of milk for 2-3 hours
Now the best part
In a trifle bowl, or you can use individual mini trifle bowls – start making the layers.
Add the cooked and cooled tapioca, then add the chia seeds (they would’ve bloomed by now) and finally top it with diced mangoes and sprinkle dessicated coconut and slightly drizzle with honey.. voila!!!
Your tapioca and chia seeds pudding is now ready to be served…
