Invited our friends over, but dessert was quite a daunting task , from the thoughts of what to make and the next immediate being on how to serve it, the thoughts were endless..
Then all of a sudden it struck me, that I had bought these beautiful stoneware and the sole reason behind buying them was to serve phirni in them! How proactive is that?!
That’s it.. it was decided , the main highlight of the evening would be ‘Phirni’!
Phirni is a traditional northindian dessert — ground rice cooked with milk and sugar !
Simple, yet satisfying!
Rice soaked 5 tablespoons
Milk  1 litre
Saffron (kesar) a pinch
Sugar  3/4 cup
Green cardamom powder  1/2 teaspoon
How’s it made:
Drain and grind the rice to a coarse paste.
Bring milk to a boil, add saffron, cardamom powder and stir .
Add rice paste dissolved in a little water or cold milk.

Cook till rice is completely cooked, stirring constantly.

Add sugar  and cook till sugar is completely dissolved.

Garnish with strawberries, mint and ground almonds and pistachios!
Serve absolutely chilled!
