Savoury Oats Pancake

This savoury oats pancake has to be the most phenomenal pancake I have ever tried and now is a regular on the menu at home.

It can be made with varied ingredients and can be easily listed under the healthy category, this would also be an ideal lunch option for your kids lunchbox.
Now, as to how to convince your kids, ill leave that to you.. 🙂


Here’s how to make it

Ingredients:

1 cup Oats
1/2 cup spinach or Kale;finely chopped
1/2 onion, finely chopped
1 clove garlic, finely chopped
1-2 green chillies
1 tomato, finely chopped
Salt to taste
1/4th tsp cumin powder
Few sprigs fresh coriander, finely chopped
Oil- just a drizzle

Method

Add Oats to a bowl and add water gradually to make a batter , the consistency should not be too runny.

Then add rest of the ingredients and mix until well incorporated.

Heat the nonstick pan , add a few drops of oil and then add 3-4 tablespoons of the batter to the pan, you will need to flatten the batter with the back of the spatula .

Simmer the heat and let it cook for 5-7 minutes on each side.If you like it crispy, let it cook for a bit longer .

Serve hot with garlic and mint raita or coriander chutney!
