The superfood – Quinoa 

Quinoa – pronounced as kinwa ;
To make something out of ‘Quinoa’ has on been on my cooking agenda for quite a while now, infact, the packet has been lying low in the pantry !
I think i didn’t have the courage or better said a reliable recipe to kick start my adventure with this healthy grain.
This has moved from the health stores to the mainstream market shelves and has more or less now entered our homes!
The first plunge was a few days ago, when I looked at the directions on the back of the packet and did as it said.And guess what, total disaster!!! It was soggy and soupy! Well, I didn’t have the heart to throw it out, so had it with vegetable stir fry and honestly, I really liked the taste!
The first thought to myself, I will try it again and will ensure I get the direction right!
We had a very hot day yesterday, you heard it right, sun and us , don’t really get along very well, so whatever days we get we make the most out of it!

Considering the day was hot, didn’t want to go all the way cooking in the heat, so decided to make the quinoa once again, as a salad!
After a bit of research, I think I knew how to make it, all about timing here!
Quinoa Salad with Avocado and Almonds 
1 cup quinoa ( golden )
1/2 cucumber , diced
1/2 lemon, juiced and zest kept aside
1 avocado , diced
1/2 cup almonds, finely sliced
2 spring onions, finely chopped
3 tbsp olive oil
1/2 tbsp balsamic vinegar
Salt to taste
Freshly ground black pepper
How it’s made:
1 cup Quinoa : 2 cups water/vegetable or chicken broth – (Scroll down for the method to cook quinoa )
  1. Dice the cucumber and avocado
  2. Finely chop the spring onions and add it to the quinoa in a large bowl
  3. Zest the lemon right into the bowl and juice the lemon and whisk the juice together with the olive oil, balsamic vinegar
  4. Now, toss with quinoa
  5. Add in the finely sliced almonds
  6. Season with salt and pepper
  7. Serve chilled / warm with sprinkled almonds and chopped avocados!
Method to cook Quinoa:
Place the quinoa in a fine-mesh strainer, and rinse thoroughly with cool water. Rub and swish the quinoa with your hand while rinsing, and rinse for at least 2 minutes under the running water. Drain.
Heat a drizzle of olive oil in the saucepan over medium-high heat, and add the drained quinoa. Cook, stirring, for about 1-2 minutes, until water evaporates.
Add the water/ broth , salt and bring to a boil.
Simmer the heat and cover and let it cook for 15 minutes.
After 15 minutes, turn off the heat and leave it covered  for 5 minutes.
After 5 minutes, remove the lid, fluff the quinoa gently with a fork, and serve.
